Welcome to ZEats Café

ZEats Café is a new recipe series inspired by the little café I have always imagined owning. It is a place for comforting sandwiches, fresh salads, homemade soups and simple dishes made with bold flavors and a little creativity. These are the meals I would put on the menu—made first in my own kitchen and shared so you can recreate them in yours.
We are starting with grilled cheese, one of the simplest and most comforting sandwiches to make. This version goes beyond the classic, pairing creamy blueberry goat cheese with finely chopped tomato and onion, garlic powder and red pepper flakes on buttery white French bread. The result is sweet, savory, slightly spicy and perfectly crisp on the outside.
Directions
- Melt butter in a skillet over medium-low heat.
- Place one slice of white French bread directly into the melted butter.
- Butter the top of the bread while it is in the skillet.
- Add the finely chopped onion and tomato, followed by the blueberry goat cheese.
- Season with garlic powder and red pepper flakes.
- Place the second slice of bread on top.
- Cook until the bottom is golden and crisp, then carefully flip.
- Continue cooking until the second side is toasted and the goat cheese is warm and creamy.
