Ingredients:
For the Grilled Salmon:
- 1 pound of salmon fillets
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1-2 teaspoons Z Eats all purpose seasoning
- Juice of 1 lime
For the Taco Assembly:
- 8 small flour or corn tortillas
- 2 cups romaine lettuce, shredded
- 1 cup diced tomatoes
- 1/2 cup diced red onions
- 1/2 cup diced yellow bell peppers
- 1/2 cup crumbled goat cheese
- Lime wedges for garnish
For the Cilantro Lime Crema (optional):
- 1/2 cup sour cream
- 2 tablespoons mayonnaise
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
-
Preheat your grill to medium-high heat (around 400°F/200°C).
-
In a small bowl, whisk together the olive oil, minced garlic, paprika, Z Eats all-purpose seasoning and lime juice to create a marinade for the salmon.
-
Place the salmon fillets on a plate and brush them generously with the marinade on both sides. Let the salmon marinate for about 15-30 minutes (marinate longer for more flavor) while the grill heats up.
-
While the salmon is marinating, you can prepare the cilantro lime crema (if desired). In a separate bowl, combine the sour cream, mayonnaise, chopped cilantro, lime juice, salt, and pepper. Mix well and refrigerate until ready to use.
-
Once the grill is hot, lightly oil the grates to prevent sticking. Place the marinated salmon fillets on the grill skin-side down. Grill for about 4-5 minutes per side, or until the salmon flakes easily with a fork and has beautiful grill marks. Cooking time may vary depending on the thickness of your salmon fillets.
-
While the salmon is grilling, warm the tortillas on the grill for about 30 seconds per side until they are slightly charred and pliable. Wrap them in foil to keep warm.
-
Once the salmon is done, remove it from the grill and let it rest for a minute. Then, use a fork to flake the salmon into bite-sized pieces.
-
To assemble your grilled salmon tacos, place a generous portion of shredded romaine lettuce on each tortilla. Top with the grilled salmon flakes, diced tomatoes, red onions, yellow bell peppers, and crumbled goat cheese.
-
Drizzle the cilantro lime crema over the top of the ingredients or serve it on the side for dipping. Garnish with lime wedges for an extra burst of flavor.
-
Serve your delicious grilled salmon tacos immediately while they're still warm. Enjoy your flavorful and nutritious meal!
