A Bright Citrus Rum Cooler With Mint & Honey

Some drinks come together because you planned them. Others happen because you look around the kitchen, grab a few good ingredients, and somehow end up with something you immediately want to make again.

That was this drink.

I wanted something refreshing, citrusy and simple, so I reached for fresh lemon, lime, mint, honey and Wray & Nephew White Overproof Rum. The result was bright and tart with a little sweetness from the honey, fresh herbal notes from the muddled mint, and that unmistakable Jamaican rum kick.

It is incredibly easy to make and perfect for a warm evening, casual dinner at home, backyard gathering, or one of those nights when you want a cocktail without pulling half the bar cart out.

Citrus, Mint & Honey Rum Cooler


Makes 1 drink

Ingredients

  • ½ fresh lime
  • 1 fresh lemon
  • Fresh mint leaves
  • Honey, to taste
  • Wray & Nephew White Overproof Rum, to taste
  • Cold water
  • Ice

Optional: Substitute sparkling or soda water for the regular water if you want some fizz.

How to Make It

Add a small handful of fresh mint to your glass and gently muddle it to release the oils and aroma.

Squeeze in the juice from half a lime and one whole lemon. Add honey to your preferred sweetness and stir well so the honey begins to dissolve into the citrus.

Add your Wray & Nephew rum, then fill the glass with ice.

Top everything with cold water and give it a good stir. For a lighter, bubbly version, use soda water instead.

Taste and adjust. Add a little more honey if you want it sweeter, more lime if you like extra tartness, or more water if you want to soften the rum.

Garnish with extra mint, lemon or lime if you’re feeling fancy.

Make It Your Own

What I love about this cocktail is how easy it is to adjust. The citrus keeps it fresh, the mint makes it feel almost garden-inspired, and the honey gives you sweetness without turning it into a sugary drink.

You could also add cucumber, fresh ginger, berries or even a little pineapple juice depending on what you have around.

And if you’re making a non-alcoholic version, simply leave out the rum and use sparkling water for a refreshing citrus-mint cooler.

The combination of lemon, lime, mint, honey and Jamaican rum is simple, but it works.

Sometimes that’s all you need.
